One Recipe makes a Big Batch of this Mouth Watering Stew the Whole Family will Love!
- 2 Tbsp.(30 ml) olive or vegetable oil
- 2 lb. cubed stewing beef (or cube a blade, round or sirloin tip steak)
- ¼ cup (50 ml) all-purpose flour
- 2 garlic cloves, minced
- 1 large onion, cut lengthwise in eighths
- 1 cup (250 ml) beef stock
- 1 can (28 oz/796 ml) diced tomatoes
- 2 Tbsp. (30 ml) EACH Worcestershire sauce & balsamic vinegar
- 1 tsp. (5 ml) dried thyme
- ½ tsp. (2 ml) EACH salt & pepper
- 1 bay leaf
- 2 carrots, cut in 1inch chunks
- Potatoes, cut in bite size chunks
- Chopped fresh parsley (optional)

1.Heat oil in large pot over medium-high heat until hot. Brown meat in 4 batches. Set beef aside; sprinkle beef with flour.
2.Add garlic & onion; cook for 3 to 4 minutes or until just softened, adding more oil if necessary. Stir in stock, scraping up browned bits from bottom of pan. Add beef, tomatoes, Worcestershire, vinegar, thyme, salt,pepper & bay leaf. Bring to simmer.
3.Simmer, covered, on-stove or in 325 degree F (160 degree C) oven for 1 hour or until fork-tender. Add carrots & potatoes; cook for 30 to 40 minutes or until tender. Serve garnished with parsley.
